
Slow Cooker Cilantro Lime Chicken

- ½ c chicken broth
- ¼ c olive oil
- ¼ c lime juice
- 4 cloves garlic peeled and smashed
- 1 jalapeno seeded and chopped
- 2 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon kosher salt
- 1 teaspoon ground pepper
- 2 lb boneless skinless chicken breasts
- ½ c chopped cilantro

- Place the chicken broth, olive oil, lime juice, garlic, jalapeno, salt, cumin, paprika, and pepper into a food processor.
- Blend until the garlic and jalapeno are pulverized and the sauce is well incorporated.
- Lay the chicken in a single layer in the crockpot. Pour the sauce over the chicken.
- Cover and cook on high for 3–4 hours or low for 5–6 hours, until the chicken is very tender.
- Using two forks, shred the chicken right in the pot.
- Add the cilantro, then toss until well combined. Serve warm and enjoy!

Leftovers keep in a sealed container in the fridge for up to 1 week or freezer for 2 months.
