
Easy Baked Taco Hashbrown Casserole

- 1 lb ground beef lean
- 1 package frozen hashbrowns thawed
- 1 cup sour cream
- 1 can cream of mushroom soup condensed
- 1 cup shredded cheddar cheese divided
- 1 packet taco seasoning mix about 1 oz
- ½ cup chopped onion
- ½ cup green bell pepper chopped

- Preheat the oven to 350°F (175°C).
- In a large skillet, cook the ground beef over medium heat until browned; drain excess fat.
- Add the chopped onion and green bell pepper to the skillet and cook until tender.
- Stir in the taco seasoning mix and cook for another 2 minutes.
- In a large bowl, combine the cooked beef mixture, thawed hashbrowns, sour cream, cream of mushroom soup, and half of the shredded cheddar cheese; mix well.
- Season with salt and pepper to taste.
- Transfer the mixture to a greased 9x13 inch baking dish and sprinkle the remaining cheddar cheese on top.
- Bake in the preheated oven for 35 minutes or until the cheese is melted and bubbly.
