  • 4 breasts Boneless skinless chicken breasts to keep it lean and juicy
  • 1 cup Salsa pick your favorite kind, chunky or smooth
  • 1 cup Canned diced tomatoes with chilies or one 10-ounce can Rotel, drained well
  • 1 ounce Taco seasoning or 2 tablespoons homemade taco seasoning
  • 0.5 Diced onion adds a little crunch and sweetness

  • Place the chicken breasts inside your crockpot. Spread them out so they cook evenly.
  • Pour the salsa, diced tomatoes with chilies, taco seasoning, and the diced onion right on top of your chicken. No stirring yet.
  • Secure the lid on your pressure cooker with the sealing ring snug. Set it on low for 360 minutes (6 hours) or high for 180 to 240 minutes (3 to 4 hours).
  • Once cooking is done, follow the slow release method to let the pressure come down naturally. Watch steam cues before opening.
  • Shred the chicken in the crockpot using two forks and mix it with the sauce before serving in taco shells or tortillas with your favorite toppings.

Notes

Serve chicken tacos warm with your favorite toppings like shredded cheese, sour cream, and cilantro. Optional extras include sliced avocado, jalapenos, or lime wedges.
