- 1 ½ cups granulated sugar
- 4 eggs large
- ½ cup apple cider fresh or store-bought

- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg

- Grease and flour a 7-inch bundt pan or another suitable pan for your pressure cooker.
- In a medium bowl, sift together the flour, baking powder, salt, cinnamon, and nutmeg.
- In a large bowl, cream the softened butter and sugar until light and fluffy.
- Add eggs one at a time to the butter mixture, beating well after each addition.
- Mix in the vanilla extract.
- Alternately add the dry ingredients and apple cider to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined.
- Pour batter into the prepared pan.
- Add 1 cup of water to the pressure cooker and place the pan on a trivet inside the cooker.
- Seal the cooker and cook on high pressure for 55 minutes.
- Allow natural pressure release, then remove cake and cool before removing from the pan.
