  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter softened
  • 1 ½ cups granulated sugar
  • 4 eggs large
  • ½ cup apple cider fresh or store-bought
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg

  • Grease and flour a 7-inch bundt pan or another suitable pan for your pressure cooker.
  • In a medium bowl, sift together the flour, baking powder, salt, cinnamon, and nutmeg.
  • In a large bowl, cream the softened butter and sugar until light and fluffy.
  • Add eggs one at a time to the butter mixture, beating well after each addition.
  • Mix in the vanilla extract.
  • Alternately add the dry ingredients and apple cider to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined.
  • Pour batter into the prepared pan.
  • Add 1 cup of water to the pressure cooker and place the pan on a trivet inside the cooker.
  • Seal the cooker and cook on high pressure for 55 minutes.
  • Allow natural pressure release, then remove cake and cool before removing from the pan.

Notes

Serve the pound cake sliced warm or at room temperature, optionally with whipped cream or caramel sauce.
