
Beef Lombardi Casserole Pressure Cooker Recipe
This Beef Lombardi Casserole is a hearty, comforting dish made with ground beef, seasonings, pasta, and melty cheese – all pressure cooked for a quick, delicious dinner.

- 1 lb Ground beef lean
- 1 cup Diced onion
- 2 cloves Garlic minced
- 1 can Tomato paste 6 oz
- 1 can Diced tomatoes 14.5 oz
- 1 cup Beef broth
- 1 teaspoon Dried oregano
- 1 teaspoon Paprika
- 1 teaspoon Salt or to taste
- ½ teaspoon Black pepper
- 2 cups Egg noodles uncooked
- 1 cup Sour cream
- 1 cup Cottage cheese
- 1 tablespoon Chopped parsley optional garnish
- 1 cup Shredded cheddar cheese

- Turn pressure cooker to sauté mode and cook ground beef until browned. Drain excess fat.
- Add diced onions and cook until softened, about 3 minutes. Stir in minced garlic.
- Mix in tomato paste, diced tomatoes, beef broth, oregano, paprika, salt and pepper. Stir well.
- Add uncooked egg noodles and stir to combine with the sauce mixture.
- Seal the pressure cooker and cook on high pressure for 5 minutes. Quick release the pressure when done.
- Carefully open lid and gently stir in sour cream and cottage cheese until combined.
- Top casserole with shredded cheddar cheese and close lid (without sealing) to allow cheese to melt.
- Sprinkle chopped parsley over the top before serving (optional).
- Serve hot and enjoy!
Notes
You can substitute ground turkey for ground beef. This dish freezes well and can be reheated for an easy meal prep option.
