  • 1 lb Ground beef lean
  • 1 cup Diced onion
  • 2 cloves Garlic minced
  • 1 can Tomato paste 6 oz
  • 1 can Diced tomatoes 14.5 oz
  • 1 cup Beef broth
  • 1 teaspoon Dried oregano
  • 1 teaspoon Paprika
  • 1 teaspoon Salt or to taste
  • ½ teaspoon Black pepper
  • 2 cups Egg noodles uncooked
  • 1 cup Sour cream
  • 1 cup Cottage cheese
  • 1 tablespoon Chopped parsley optional garnish
  • 1 cup Shredded cheddar cheese

Instructions

  • Turn pressure cooker to sauté mode and cook ground beef until browned. Drain excess fat.
  • Add diced onions and cook until softened, about 3 minutes. Stir in minced garlic.
  • Mix in tomato paste, diced tomatoes, beef broth, oregano, paprika, salt and pepper. Stir well.
  • Add uncooked egg noodles and stir to combine with the sauce mixture.
  • Seal the pressure cooker and cook on high pressure for 5 minutes. Quick release the pressure when done.
  • Carefully open lid and gently stir in sour cream and cottage cheese until combined.
  • Top casserole with shredded cheddar cheese and close lid (without sealing) to allow cheese to melt.
  • Sprinkle chopped parsley over the top before serving (optional).
  • Serve hot and enjoy!

Notes

You can substitute ground turkey for ground beef. This dish freezes well and can be reheated for an easy meal prep option.
