Instructions
Turn pressure cooker to sauté mode and cook ground beef until browned. Drain excess fat.
Add diced onions and cook until softened, about 3 minutes. Stir in minced garlic.
Mix in tomato paste, diced tomatoes, beef broth, oregano, paprika, salt and pepper. Stir well.
Add uncooked egg noodles and stir to combine with the sauce mixture.
Seal the pressure cooker and cook on high pressure for 5 minutes. Quick release the pressure when done.
Carefully open lid and gently stir in sour cream and cottage cheese until combined.
Top casserole with shredded cheddar cheese and close lid (without sealing) to allow cheese to melt.
Sprinkle chopped parsley over the top before serving (optional).
Serve hot and enjoy!
Notes
You can substitute ground turkey for ground beef. This dish freezes well and can be reheated for an easy meal prep option.
