- 1 lb Ground beef lean
- 1 Onion diced
- 2 cloves Garlic minced
- 2 cups Cauliflower florets
- 1 cup Broccoli florets
- 2 carrots Carrots sliced
- 1 cup Green beans chopped
- 1 can Diced tomatoes 14 oz, with juices
- 1 can Tomato sauce 8 oz
- 4 cups Beef broth low sodium
- 1 teaspoon Salt or to taste
- ½ teaspoon Black pepper
- 1 teaspoon Paprika
- ½ teaspoon Dried oregano
- 1 tablespoon Olive oil

- Set your Instant Pot to sauté mode and heat the olive oil.
- Add the ground beef and cook until browned. Drain excess fat if necessary.
- Add diced onion and minced garlic. Cook for 2-3 minutes until fragrant.
- Stir in the cauliflower, broccoli, carrots, and green beans.
- Pour in diced tomatoes, tomato sauce, and beef broth.
- Season with salt, pepper, paprika, and oregano. Stir everything together.
- Seal the Instant Pot lid and set to high pressure for 10 minutes.
- Once cooking is complete, allow a natural pressure release for 10 minutes, then quick release any remaining pressure.
- Open the lid, stir the soup, and serve hot.

This soup stores well in the fridge for up to 4 days and freezes beautifully for future meals.
