Set your Instant Pot to sauté mode and heat the olive oil.
Add the ground beef and cook until browned. Drain excess fat if necessary.
Add diced onion and minced garlic. Cook for 2-3 minutes until fragrant.
Stir in the cauliflower, broccoli, carrots, and green beans.
Pour in diced tomatoes, tomato sauce, and beef broth.
Season with salt, pepper, paprika, and oregano. Stir everything together.
Seal the Instant Pot lid and set to high pressure for 10 minutes.
Once cooking is complete, allow a natural pressure release for 10 minutes, then quick release any remaining pressure.
Open the lid, stir the soup, and serve hot.

This soup stores well in the fridge for up to 4 days and freezes beautifully for future meals.
