  • 1 lb Ground beef lean
  • 1 Onion diced
  • 2 cloves Garlic minced
  • 2 cups Cauliflower florets
  • 1 cup Broccoli florets
  • 2 carrots Carrots sliced
  • 1 cup Green beans chopped
  • 1 can Diced tomatoes 14 oz, with juices
  • 1 can Tomato sauce 8 oz
  • 4 cups Beef broth low sodium
  • 1 teaspoon Salt or to taste
  • ½ teaspoon Black pepper
  • 1 teaspoon Paprika
  • ½ teaspoon Dried oregano
  • 1 tablespoon Olive oil

  • Set your Instant Pot to sauté mode and heat the olive oil.
  • Add the ground beef and cook until browned. Drain excess fat if necessary.
  • Add diced onion and minced garlic. Cook for 2-3 minutes until fragrant.
  • Stir in the cauliflower, broccoli, carrots, and green beans.
  • Pour in diced tomatoes, tomato sauce, and beef broth.
  • Season with salt, pepper, paprika, and oregano. Stir everything together.
  • Seal the Instant Pot lid and set to high pressure for 10 minutes.
  • Once cooking is complete, allow a natural pressure release for 10 minutes, then quick release any remaining pressure.
  • Open the lid, stir the soup, and serve hot.

Notes

This soup stores well in the fridge for up to 4 days and freezes beautifully for future meals.
