
Zucchini, Tomato, and Ground Beef Soup Pressure Cooker Recipe

- 1 lb Ground beef lean
- 2 Zucchini medium, sliced
- 1 can Diced tomatoes 14.5 oz
- 1 Onion chopped
- 2 cloves Garlic minced
- 4 cups Beef broth
- 1 teaspoon Dried basil
- 1 teaspoon Salt or to taste
- 0.5 teaspoon Black pepper or to taste

- Turn pressure cooker to Sauté mode and add ground beef.
- Cook until browned, then drain excess fat.
- Add chopped onion and minced garlic. Sauté for 2-3 minutes.
- Add zucchini slices, diced tomatoes, and beef broth.
- Season with dried basil, salt, and black pepper.
- Lock lid and set pressure cooker to High Pressure for 15 minutes.
- Once done, let the pressure release naturally for 10 minutes, then quick release remaining pressure.
- Stir well and serve hot.
Notes
You can garnish with grated Parmesan cheese or fresh herbs if desired.
