  • 1 lb Ground beef lean
  • 2 Zucchini medium, sliced
  • 1 can Diced tomatoes 14.5 oz
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Beef broth
  • 1 teaspoon Dried basil
  • 1 teaspoon Salt or to taste
  • 0.5 teaspoon Black pepper or to taste

Instructions

  • Turn pressure cooker to Sauté mode and add ground beef.
  • Cook until browned, then drain excess fat.
  • Add chopped onion and minced garlic. Sauté for 2-3 minutes.
  • Add zucchini slices, diced tomatoes, and beef broth.
  • Season with dried basil, salt, and black pepper.
  • Lock lid and set pressure cooker to High Pressure for 15 minutes.
  • Once done, let the pressure release naturally for 10 minutes, then quick release remaining pressure.
  • Stir well and serve hot.

Notes

You can garnish with grated Parmesan cheese or fresh herbs if desired.
