- 1 Carrot sliced
- ½ cup Zucchini sliced
- 2 tablespoon Butter for cooking
- ¼ cup Chicken broth
- 1 tablespoon Rice vinegar
- 1 tablespoon Mirin
- 1 tablespoon Sugar
- ½ teaspoon Salt
- ¼ teaspoon Black pepper
- ¼ teaspoon Red pepper flakes optional
- 2 tablespoon Scallions chopped for garnish
- 1 tablespoon Sesame seeds toasted for garnish
- 1 cup Cooked white rice to serve
- 1 tablespoon Vegetable oil for cooking

- Heat vegetable oil and butter in a hibachi or large skillet over medium-high heat.
- Add chicken pieces and cook until lightly browned and cooked through, about 5-7 minutes.
- Add garlic and ginger; stir-fry for 1 minute until fragrant.
- Add the vegetables and cook for 3-4 minutes until they are just tender.
- Stir in soy sauce, chicken broth, rice vinegar, mirin, sugar, salt, black pepper, and red pepper flakes; cook for another 2 minutes. Garnish with scallions and sesame seeds. Serve hot over cooked white rice, with lemon juice if desired.
