
Apple Cider Pulled Pork Sliders with Pomegranate Bourbon BBQ Sauce

- 4 lbs Pork shoulder boneless
- 2 cups Apple cider
- 1 cup Pomegranate juice fresh or store-bought
- ½ cup Bourbon
- ½ cup Ketchup
- ¼ cup Brown sugar packed
- 1 tablespoon Apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon Smoked paprika
- 1 teaspoon Garlic powder
- 1 teaspoon Onion powder
- ½ teaspoon Salt
- ½ teaspoon Black pepper
- 8 Slider buns preferably soft
- 1 cup Coleslaw optional topping
- 2 tablespoon Olive oil for searing
- 1 tablespoon Worcestershire sauce
- ¼ teaspoon Cayenne pepper optional for heat
- 2 cloves Garlic minced
- 1 Yellow onion sliced
- ½ cup Water
- 1 tablespoon Honey

- Preheat oven to 300°F (150°C).
- Season the pork shoulder with salt, pepper, smoked paprika, garlic powder, and onion powder.
- Heat olive oil in a large skillet over medium-high heat. Sear pork on all sides until browned, about 3-4 minutes per side.
- Transfer pork to a roasting pan or slow cooker.
- In a bowl, mix apple cider, pomegranate juice, bourbon, ketchup, brown sugar, apple cider vinegar, Dijon mustard, Worcestershire sauce, honey, and spices.
- Pour the sauce mixture over the pork. Add sliced onions and garlic cloves. Add water as needed to keep moist.
- Cover and roast in the oven for 8 hours and 10 minutes or until pork is tender and easily shredded.
- Remove pork from oven, shred with forks, and mix with sauce.
- Serve shredded pork on slider buns topped with coleslaw if desired.
Notes
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently and add extra sauce if needed.
