Classic thumbprint cookies with a sweet, soft dough and jam-filled centers. Perfect for any occasion, these cookies are rolled in sugar for added sparkle and baked until golden.

- 1 cup unsalted butter softened to room temperature
- ⅓ cup sugar
- ⅓ cup light brown sugar tightly packed
- 1 large egg yolk
- ¾ teaspoon vanilla extract
- 2 ¼ cup all purpose flour
- 2 teaspoon cornstarch
- ½ teaspoon salt
- ½ cup sugar for rolling (optional)
- ⅓ cup jam or preserves flavor of your choice; raspberry used

- Place butter in the bowl of a stand mixer and beat until creamy.
- Scrape down sides, add sugars, and beat on medium-high until well-combined (30–60 seconds).
- Add egg yolk and vanilla extract and beat well.
- In a separate bowl, whisk together flour, cornstarch, and salt.
- With mixer on low, gradually add flour mixture to wet ingredients until totally combined. Finish mixing by hand if needed.
- Scoop dough into 1 tablespoon-sized balls, roll smooth, optionally coat with sugar, and create a thumbprint indent in each.
- Transfer dough to freezer and chill for 30 minutes.
- Preheat oven to 375°F (190°C). Microwave jam briefly to soften and stirable. Fill each thumbprint with jam.
- Place cookies on parchment lined baking sheet and bake for 11 minutes until edges are golden. Cool completely.

Use your favorite jam flavor — raspberry, strawberry, or apricot work great. Chill dough before baking to prevent spreading.
