20-Minute One Pot Garlic and Herb Boursin Pasta

  • 200-250 grams dry rigatoni or other pasta shape
  • 1 package Boursin Fine Herbs & Garlic cheese 5.2 ounce/150g
  • 1 lemon zest from 1 lemon plus more for garnish
  • 1 tablespoon lemon juice
  • ¼ teaspoon chili flakes
  • ¼ teaspoon ground pepper
  • 1 cup frozen peas
  • ¾ cup shredded parmesan cheese
  • salt to taste
  • pepper to taste

  • Bring a large pot of salted water to a boil. Once boiling, add pasta and cook according to package directions. Reserve 1 cup pasta water and then drain the pasta.
  • Add the drained pasta back to the pot and set over low heat on the oven.
  • Immediately add in the Boursin cheese, lemon zest, lemon juice, chili flakes, ground pepper, frozen peas and shredded parmesan cheese. Start stirring together and gradually add in ¼ cup pasta water; keep stirring to create a creamy sauce that clings to the noodles.
  • Taste and adjust seasoning with salt and pepper. Make sure the peas are warmed through – if not keep on low heat and stir occasionally until they are.
  • Lastly, if you want a creamier sauce, add in an additional ¼ cup pasta water. (I generally use ½ cup pasta water total).
  • Enjoy immediately topped with more lemon zest, chili flakes and parmesan cheese if desired.
  • Preheat oven to 375°F (190°C). Toss rigatoni, frozen peas and Boursin cheese in a large ovenproof pot with lemon zest, lemon juice, chili flakes, and ground pepper. Pour just enough water to barely cover pasta, stir well.
  • Cover tightly and bake in oven for 15 minutes. Stir, sprinkle parmesan cheese and bake uncovered for an additional 5 minutes. Remove, stir gently, season to taste and serve garnished with lemon zest, chili flakes and parmesan cheese.

Notes

When adding pasta water, add ¼ cup to start. Add more gradually until desired creaminess is reached. Substitutes for peas include spinach, broccoli, or tomatoes. Protein additions include cooked chicken, shrimp, or sausage. Try Shallot & Chive Boursin for variation. If you forget to reserve pasta water, use vegetable or chicken stock or hot water instead. Store leftovers in airtight container up to 3-4 days. Reheat gently with splash of water or broth.
