  • 12 oz Ground bison (85% lean) Simple Truth from Kroger or similar
  • 3 large Zucchinis firm and nice looking
  • cup Red onion chopped
  • 1 tablespoon Garlic minced
  • ⅓-1/2 cup Tomato sauce no salt added
  • ¾ cup Parmesan cheese grated, regular or reduced fat
  • 1 tablespoon Fresh thyme
  • ½ tablespoon Smoked paprika
  • 1 teaspoon Cumin optional
  • to taste Sea salt
  • to taste Pepper
  • for spray Olive oil spray
  • as needed Greek yogurt optional garnish
  • as needed Green onion optional garnish

  • Set oven to 375F.
  • Chop the ends off the zucchinis, then scrape out the inside where the seeds are using a spoon.
    3 large Zucchinis
  • Set a nonstick skillet on medium heat and spray with olive oil. Add garlic and red onions and cook until the red onion turns brown. Be careful not to burn the garlic.
    ⅓ cup Red onion, 1 tablespoon Garlic, for spray Olive oil spray
  • Add the ground bison to the skillet and begin to chop it up in the pan using a spatula. Then add the seasonings. Chop and cook until there are no more visible pink (raw) pieces of meat.
    1 tablespoon Fresh thyme, ½ tablespoon Smoked paprika, 1 teaspoon Cumin, to taste Sea salt, to taste Pepper
  • Add the tomato sauce and stir together. Season to taste with sea salt and pepper, then reduce the heat.
    ⅓-1/2 cup Tomato sauce, to taste Sea salt, to taste Pepper
  • Take the skillet off heat and mix half of your parmesan right in. This adds creaminess and extra flavor.
    ¾ cup Parmesan cheese
  • Place the zucchini boats in a baking dish, add about 3 tablespoons of the meat mixture inside the hollow portions of each zucchini boat.
    3 large Zucchinis
  • Top each boat with about 2 tablespoons of grated parmesan.
    ¾ cup Parmesan cheese
  • Bake in the oven for 30 minutes at 375F.
  • Garnish if you would like with Greek yogurt and green onion, then enjoy!

Notes

Store leftovers in an airtight container in the fridge for up to three days. Freeze individually wrapped for longer storage. Reheat using low heat in the oven or microwave with a cup of water close by to avoid drying out.
