Ingredients
  

  • 1 pound ground beef
  • 3 cups frozen mixed vegetables Can substitute with fresh vegetables if preferred.
  • 2 cups shredded cheddar cheese
  • 2 cups tater tots

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a large skillet, cook the ground beef over medium heat until browned, about 5-7 minutes. Drain excess fat.
  • Stir in the frozen mixed vegetables and cook for an additional 3 minutes until they are heated through.
  • In a large mixing bowl, combine the beef and vegetable mixture with 1 cup of shredded cheddar cheese. Mix well.
  • Transfer the mixture into a greased baking dish and spread evenly.
  • Top the mixture with the tater tots, arranging them in a single layer.
  • Sprinkle the remaining cup of grated cheddar cheese over the tater tots.
  • Bake in the preheated oven for 20-25 minutes, or until the tater tots are golden brown and crispy.
  • Let it cool for a few minutes before serving.

Notes

You can substitute the mixed vegetables with fresh vegetables if preferred.
For an extra kick, consider adding some spices or herbs like garlic powder or Italian seasoning.
