  • 1 pound ground beef browned
  • 1 can (10 oz) red enchilada sauce
  • 1 cup shredded cheddar cheese
  • 8 corn tortillas cut into quarters
  • 1 can (15 oz) black beans drained and rinsed

  • Preheat oven to 375°F (190°C).
  • Cook ground beef in a skillet over medium heat until no longer pink. Drain excess fat.
  • Stir in black beans and half of the enchilada sauce. Simmer 2–3 minutes.
  • Quarter the corn tortillas.
  • In a 9x13-inch baking dish, layer half the tortillas, half the beef mixture, and half the cheese.
  • Repeat layers with remaining tortillas, beef mixture, and cheese.
  • Pour remaining enchilada sauce over the top.
  • Cover dish with foil and bake for 20 minutes.
  • Uncover and bake for an additional 10 minutes until cheese is melted and bubbly.
  • Let cool for 5 minutes before serving.
  • Enjoy warm.

Notes

Store leftovers in airtight containers in the fridge or freeze in portions. Reheat with a little broth or water to maintain moisture.
