red enchilada sauce

Preheat oven to 375°F (190°C).
Cook ground beef in a skillet over medium heat until no longer pink. Drain excess fat.
Stir in black beans and half of the enchilada sauce. Simmer 2–3 minutes.
Quarter the corn tortillas.
In a 9x13-inch baking dish, layer half the tortillas, half the beef mixture, and half the cheese.
Repeat layers with remaining tortillas, beef mixture, and cheese.
Pour remaining enchilada sauce over the top.
Cover dish with foil and bake for 20 minutes.
Uncover and bake for an additional 10 minutes until cheese is melted and bubbly.
Let cool for 5 minutes before serving.
Enjoy warm.
Notes
Store leftovers in airtight containers in the fridge or freeze in portions. Reheat with a little broth or water to maintain moisture.
