Preheat your oven to 375°F. Get your pressure cooker ready with the sealing ring cleaned and set correctly.
In a skillet over medium heat, cook ground beef until browned and fully cooked. Drain excess fat.
Stir in black beans and half the enchilada sauce into the beef. Simmer for 2-3 minutes.
Grease a 9x13-inch baking dish with oil or butter. Spread tortilla wedges on the bottom for the first layer.
Top tortilla layer with beef and bean mixture. Sprinkle shredded cheese. Repeat layers, ending with cheese.
Pour remaining enchilada sauce over the casserole for a saucy finish.
Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10 minutes until cheese is golden brown.
Let rest for 5 minutes before serving to allow casserole to set.
Notes
Store leftovers in the fridge or freezer. Reheat in the oven for the best texture and flavor. Swap in ground turkey for a lighter version.
