Equipment

  • 1 air fryer
  • 1 mixing bowl
  • 1 cutting board
  • 1 baking sheet
  • 1 set measuring cups and spoons

Ingredients

  • 2 medium zucchini About 1 pound total.
  • ½ cup breadcrumbs Preferably whole wheat.
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 large egg
  • as needed spray olive oil For spraying in air fryer.

Instructions

  • Preheat the air fryer to 400°F (200°C).
  • Wash and trim the ends off the zucchini. Cut each zucchini into strips, approximately ¼ inch thick, to resemble fries.
  • In a mixing bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and black pepper.
  • In another bowl, beat the egg.
  • Dip each zucchini strip into the egg, letting any excess drip off, then coat it in the breadcrumb mixture, ensuring the fries are well-covered.
  • Spray the air fryer basket with olive oil spray to prevent sticking. Place the zucchini fries in a single layer in the basket, ensuring they do not overlap.
  • Cook the zucchini fries in the air fryer for 12-15 minutes, shaking the basket halfway through, until they are golden brown and crispy.
  • Once done, remove the fries from the air fryer and let them cool for a minute before serving.

Notes

Serve your air fryer zucchini fries with marinara sauce or ranch dressing for dipping. You can adjust the seasonings according to your taste preferences or add other spices such as cayenne or Italian seasoning for a different flavor profile.
