- 2 medium eggplants About 1.5 pounds total.
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ cup grated Parmesan cheese Optional.
Start by washing the eggplants thoroughly. Cut off the tops and slice them into rounds, about ½ inch thick.
Place the eggplant slices in a mixing bowl. Drizzle the olive oil over them and add the salt, black pepper, garlic powder, and paprika. Toss well to ensure all the slices are coated evenly.
Preheat your air fryer to 375°F (190°C) for about 5 minutes.
