Ingredients
  

  • 2 medium eggplants About 1.5 pounds total.
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ cup grated Parmesan cheese Optional.

Instructions
 

  • Start by washing the eggplants thoroughly. Cut off the tops and slice them into rounds, about ½ inch thick.
  • Place the eggplant slices in a mixing bowl. Drizzle the olive oil over them and add the salt, black pepper, garlic powder, and paprika. Toss well to ensure all the slices are coated evenly.
  • Preheat your air fryer to 375°F (190°C) for about 5 minutes.
  • Arrange the eggplant slices in a single layer in the air fryer basket, making sure not to overcrowd them. You may need to cook in batches.
  • Cook the eggplant for 12-15 minutes, flipping the slices halfway through the cooking time for even crispiness.
  • If using Parmesan cheese, sprinkle it on top of the slices during the last 3 minutes of cooking.
  • Once done, remove the eggplant from the air fryer and let it cool for a minute. Serve warm as a side dish or snack.

Notes

You can adjust the seasoning to your taste. Add herbs like Italian seasoning or red pepper flakes for a kick.
For different textures, try slicing the eggplant thinner for a crispier result.
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer for a few minutes before serving.
