Preheat your air fryer to 400°F (200°C) for about 5 minutes.
Set up a breading station with three shallow dishes: mix flour with salt, pepper, garlic powder, onion powder, and smoked paprika in the first dish, whisk eggs in the second dish, and combine breadcrumbs, grated cheddar cheese, and diced jalapeños in the third dish.
Dredge each chicken tender first in the flour mixture, then dip it in the beaten eggs, and finally coat it with the breadcrumb mixture, pressing gently to adhere.
Spray the air fryer basket lightly with cooking spray and arrange the breaded chicken tenders in a single layer without touching each other.
Lightly spray the tops of the chicken tenders with cooking spray.
Cook the tenders in the air fryer for 10 minutes, then flip them over and cook for an additional 5 minutes, or until they reach an internal temperature of 165°F (75°C) and are golden brown.
Once cooked, remove the tenders from the air fryer and let them rest for a couple of minutes before serving.
For extra spice, consider adding cayenne pepper to the breadcrumb mixture.
Serve the tenders with ranch or blue cheese dressing for dipping.
