In a mixing bowl, combine the drained salmon, breadcrumbs, chopped onion, bell pepper, parsley, minced garlic, egg, Dijon mustard, lemon juice, salt, and black pepper.
Use a fork or potato masher to mix the ingredients well until they're thoroughly combined.
Form the mixture into patties, about 3 inches in diameter. You should be able to make around 8 patties.
Preheat the air fryer to 375°F (190°C) for about 5 minutes.
Lightly spray the air fryer basket with cooking spray or brush with olive oil to prevent sticking.
Arrange the salmon patties in a single layer in the air fryer basket. Make sure they are not overcrowded; you may need to cook them in batches.
Cook the patties in the air fryer for 6 minutes, then carefully flip them and cook for an additional 6 minutes, or until golden brown and crispy.
Once cooked, remove the salmon patties and let them cool for a minute before serving.
