Equipment

  • 1 air fryer
  • 1 mandoline slicer or sharp knife
  • 1 mixing bowl
  • 1 Ziploc bag or large resealable bag
  • 1 kitchen towel or paper towels

Ingredients

  • 4 medium zucchinis About 600g total.
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika Or your preferred seasoning.
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • to taste grated parmesan cheese Optional for topping.

Instructions

  • Start by washing the zucchinis. Cut off the ends and slice them into thin rounds using a mandoline slicer or a sharp knife, aiming for about ¼ inch thick.
  • Place the zucchini slices in a mixing bowl and pat them dry with a kitchen towel or paper towels to remove excess moisture.
  • Drizzle the olive oil over the zucchini slices and toss until they are evenly coated.
  • Add the garlic powder, onion powder, smoked paprika, salt, and black pepper. Toss again to ensure that all the slices are well-seasoned.
  • Preheat the air fryer to 375°F (190°C) for about 5 minutes.
  • Place the seasoned zucchini slices in the air fryer basket in a single layer. You may need to cook in batches depending on the size of your air fryer.
  • Air fry for 12-15 minutes, checking halfway through and shaking the basket for even cooking. The zucchini chips should be golden brown and crispy.
  • Once cooked, remove the chips and let them cool for a few minutes. If desired, sprinkle with grated parmesan cheese for extra flavor before serving.
  • Store any leftover chips in an airtight container to keep them crisp for a day or two.

You can experiment with different seasonings like Italian herbs, cayenne pepper, or ranch seasoning to customize the flavor.
