Ingredients
  

  • 2 medium zucchinis About 400 grams.
  • 1 cup breadcrumbs About 100 grams.
  • ½ cup grated Parmesan cheese About 50 grams.
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 large eggs
  • as needed spray cooking spray Optional, for preventing sticking.

Instructions
 

  • Begin by washing and drying the zucchinis. Cut them into sticks, about ¼ inch thick.
  • In a bowl, combine breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and black pepper.
  • In another bowl, beat the eggs until well mixed.
  • Dip each zucchini stick first into the beaten eggs, ensuring they are fully coated, then roll them in the breadcrumb mixture until evenly covered.
  • Preheat the air fryer to 400°F (200°C) for about 5 minutes.
  • Lightly spray the air fryer basket with cooking spray (if using) to prevent sticking.
  • Place the coated zucchini fries in the air fryer basket in a single layer, working in batches if necessary.
  • Air fry the zucchini fries for about 12-15 minutes, turning halfway through, until golden brown and crispy.
  • Remove from the air fryer and let cool slightly before serving.

Notes

You can add your favorite spices to the breadcrumb mixture for extra flavor.
Serve these zucchini fries with your favorite dipping sauce, such as marinara or ranch.
