Heat the olive oil in a large skillet over medium heat. Once the oil is hot, add the ground beef. Cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes. Drain excess fat if necessary.
Add the diced onion and minced garlic to the skillet with the beef. Cook for an additional 3-4 minutes, or until the onion is translucent.
Stir in the chopped cabbage, salt, black pepper, paprika, and red pepper flakes (if using). Mix well to combine all ingredients.
Pour in the beef broth and Worcestershire sauce. Bring the mixture to a simmer, then reduce heat to low. Cover with a lid and cook for 15-20 minutes, or until the cabbage is tender, stirring occasionally.
If desired, stir in the dried thyme just before serving. Taste and adjust seasoning if necessary.
