Appalachian cider-baked beans takes regular pinto beans, adds salt pork, molasses, mustard, and apple cider, making them into something magical. Hearty, flavorful, and traditional, this recipe is everything you want for dinner.

  • 3 cups dried pinto beans rinsed under cold water
  • 3 cups fresh apple cider
  • 8 ounces salt pork thinly sliced
  • 2 small yellow onions peeled and left whole
  • 6 tablespoons molasses preferably sorghum molasses
  • 1 tablespoon dry mustard
  • 2 teaspoons salt

  • Rinse the dried pinto beans under cold water. Then, soak them in water covering the beans for an hour.
  • Drain the soaking water and layer the beans inside the pressure cooker. Add the onions, salt pork slices and pour the apple cider.
  • Dollop the molasses over the beans, sprinkle with mustard and salt. Stir gently.
  • Lock the lid and set to high pressure. Cook for 30 minutes. Let it release naturally for another 20 minutes.
  • Carefully open the lid. If beans are too wet, simmer slowly to thicken.
  • If you don't have a pressure cooker, bake beans low and slow in the oven.

Notes

Serve hot, directly from the pot. Enjoy next to a hearty main or as a standalone comfort dish.
