Ingredients
  

  • 4 large yellow onions
  • 1 cup grated Asiago cheese
  • ½ cup heavy cream
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon fresh thyme leaves or 1 teaspoon dried thyme
  • 2 tablespoons breadcrumbs optional, for extra crunch

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Carefully peel the onions and cut off the top and bottom to create a stable base. Hollow out the centers using a knife, leaving about a ½-inch shell.
  • In a mixing bowl, combine the grated Asiago cheese, heavy cream, olive oil, salt, pepper, and thyme. Mix well until smooth.
  • Stuff each onion with the cheese mixture, packing it tightly. If using, sprinkle breadcrumbs on top of each filled onion for added texture.
  • Place the stuffed onions in a baking dish and cover them with aluminum foil.
  • Bake in the preheated oven for 25 minutes. Then remove the foil and bake for an additional 5-10 minutes, or until the cheese is bubbly and golden brown.
  • Remove from the oven and let cool for a few minutes before serving.

Notes

You can experiment by adding herbs or spices of your choice to the cheese mixture for a unique flavor.
For even more flavor, consider drizzling a bit of balsamic glaze over the baked onions just before serving.
These onions can be prepared ahead of time and then baked just before serving for a warm and comforting dish.
