Asparagus, Bacon, Blue Cheese, and Shrimp Salad in Your Pressure Cooker
This delightful salad brings together crispy bacon, tender shrimp, and creamy blue cheese with fresh asparagus, offering a hearty and flavorful meal achievable in a half-hour with a pressure cooker.

Salad Assembly
Start out by cooking your bacon in a large skillet on medium heat till it’s crispy and has that perfect crunch. Then set it aside to crumble later but keep the drippings in the skillet.
Add the garlic halves in the bacon drippings and sauté them till they smell real good and fragrant, about a minute or so.
Now toss the raw shrimp into the same skillet and cook them until they turn pink and opaque. This should take like 3 or 4 minutes tops. Then remove the shrimp from heat.
While the shrimp cooks, trim off those woody ends from asparagus and get your baby greens ready in a big bowl.
Add the grilled corn, blue cheese crumbles, cherry tomato halves, chopped avocado, and the shrimp you just cooked with garlic into the bowl with the greens.
Drizzle one tablespoon of lemon juice over all the salad ingredients along with a tablespoon of olive oil. Toss it gently so nothing mushes up but gets a nice light coat.
Finally crumble the bacon you set aside on top for that crispy finish. Sprinkle fresh chopped chives and a crack of black pepper all over for the final sprinkle.
Serve it right away and enjoy that fresh mix of tender pull, creamy cheese, and smoky bacon with every bite.
Notes
When preparing ahead, keep bacon and avocado separate until just before serving. For best texture, add dressing and toss just before eating to prevent sogginess.
