Ingredients
  

  • 2 pieces ripe avocados Cubed
  • 1 cup sweet corn Fresh, frozen, or canned. If using canned corn, make sure to drain and rinse it before adding to the salad.
  • 2 cups cherry tomatoes Halved
  • ½ piece red onion Finely chopped
  • ½ cup fresh cilantro Chopped
  • 2 tablespoons lime juice To prevent avocados from browning quickly, add lime juice right after cutting.
  • 3 tablespoons olive oil
  • to taste salt
  • to taste black pepper

Instructions
 

  • Prepare all ingredients by washing and cutting them as needed. Cube the avocados, halve the cherry tomatoes, and finely chop the red onion and cilantro.
  • In a mixing bowl, combine the cubed avocados, sweet corn, halved cherry tomatoes, chopped red onion, and cilantro.
  • In a small bowl, whisk together the lime juice, olive oil, salt, and black pepper.
  • Pour the dressing over the salad mixture and gently toss to combine, ensuring the avocados remain intact as much as possible.
  • Taste the salad and adjust the seasoning with additional salt, pepper, or lime juice if necessary.
  • Serve immediately, or refrigerate for up to 30 minutes before serving to allow the flavors to meld.

Notes

If using canned corn, make sure to drain and rinse it before adding to the salad.
You can customize the salad by adding ingredients such as diced bell peppers, jalapeños for heat, or crumbled feta cheese for extra flavor.
