Dip each avocado wedge first into the flour, then into the beaten eggs, and finally into the breadcrumb mixture to coat thoroughly.
Place the breaded avocado fries on the prepared baking sheet in a single layer and lightly spray or drizzle olive oil over them.
Bake in the preheated oven for 15-20 minutes, or until golden brown and crispy, flipping halfway through for even cooking.
Once cooked, remove from the oven and let cool for a minute before serving.
Serve warm with your choice of dipping sauce.
