Instructions
Instructions
Preheat your oven to 375 degrees Fahrenheit. This step is key for crisping that bacon at the end.
Cut those jalapenos in half lengthwise and scoop out the seeds. You remember it's gonna get spicy so watch your fingers.
Mix cream cheese, chili powder, garlic, salt, and pepper till it's all blended and smooth. You gotta taste a little cause seasoning is key here.
Stuff each jalapeno half with that creamy mixture like it's a little treasure chest of yum.
Now grab the Italian sausage and mold it around the jalapenos real snug. Make sure it's covered from all sides.
Wrap each one tightly with a slice of bacon. If the bacon's slipping, toothpicks got your back to hold it all together.
Place all those bad boys on a parchment paper lined baking sheet and pop them in the oven for about 30 minutes. Watch for that bacon to get crispy and sausage cooked through.
Notes
Makes 4 large armadillo eggs. Slice them in half to serve, or enjoy one on your own.
