  • 2-3 pounds Boneless skinless chicken breasts or tenders bite-sized pieces work best so every bite gets wrapped
  • 16 ounces Sliced bacon thick cut or regular, thick is nice
  • cup Brown sugar firmly packed
  • 2 tablespoons Chili powder for a smoky heat boost that isn’t too wild
  • 1 teaspoon Salt to bring out all the flavors
  • ½ teaspoon Black pepper for a bit of sharpness
  • ¼ – ½ teaspoon Dried oregano adds a subtle herbal note
  • ¼ – ½ teaspoon Thyme gives an earthy touch that works real good
  • ¼ – ½ teaspoon Garlic powder because you gotta have garlic
  • ⅛ – ¼ teaspoon Crushed red pepper flakes to ramp up the heat if you wanna

  • Get your chicken cut into bite-sized pieces so each mouthful is perfect wrapped.
  • Mix together brown sugar, chili powder, salt, black pepper, oregano, thyme, garlic powder, and crushed red pepper flakes in a small bowl.
  • Grab a strip of bacon and wrap it tight around each chicken piece. Use a toothpick if it ain’t staying together good.
  • Evenly sprinkle or pat the seasoning mixture all over the bacon wrapped chicken bites.
  • Add about a cup of broth to the bottom of your pressure cooker.
  • Set your bites on the steam rack or trivet inside the cooker so they don’t sit in the broth. Seal the lid and make sure the sealing ring is in place.
  • Let the pressure build and cook at high pressure for about 10 minutes.
  • Let the pressure release naturally so the bites stay tender and juicy. Then carefully open the lid to spot those golden, crispy bacon edges.

Notes

Serve warm and consider broiling bites at the end to crisp bacon edges. Store leftovers in an airtight container in the fridge up to 4 days or freeze for longer storage.
