  • ½ cup brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon

  • ¼ teaspoon salt
  • 6 Tablespoons cold butter
  • ½ cup milk higher fat for richer flavor
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup chopped apple
  • 1 cup confectioner’s sugar
  • 2 Tablespoons milk for glaze, higher fat preferred
  • 1 teaspoon vanilla extract for glaze

  • Preheat your oven to 375°F and get a baking sheet ready with parchment paper.
  • Mix together all dry ingredients: all-purpose and whole wheat flour, brown sugar, baking powder, cinnamon, nutmeg, allspice, and salt.
  • Cut in the cold butter using a pastry cutter or fingers until coarse crumbs form.
  • Add milk, egg, and vanilla extract then stir until just combined. Gently fold in chopped apples.
  • Drop spoonfuls of batter onto the baking sheet, spacing about 2 inches apart.
  • Place baking sheet inside pressure cooker on a trivet above water. Seal lid and cook for 10 minutes using broth depth for steaming.
  • Use quick release carefully when cooking is done. Open lid when float valve drops.
  • Transfer baking sheet back to oven and bake for 20-25 minutes until golden brown and tender.

Notes

The cold butter is key for a flaky texture. Use firmer apples for juicy bursts and richer milk for better flavor. Use quick release to avoid overcooking.
