Baked Apples with Maple Greek Yogurt

  • 3 Gala apples or any variety you like
  • ¾ cup chopped pecans
  • ½ cup raisins
  • 1 teaspoon cinnamon
  • 3 teaspoon pure maple syrup
  • 1 cup Greek yogurt

  • Preheat oven to 350 degrees Fahrenheit.
  • Wash and dry apples. Cut apples in half and scoop out seeds, core, and cut a little bowl in the center of each apple. Place apples in a baking dish.
  • In a bowl combine chopped pecans, raisins, and cinnamon.
  • Add even amounts of the pecan mixture to the center of each apple.
  • Drizzle 2 teaspoon of the maple syrup over halved apples, and bake until apples are tender, about 30-35 minutes.
  • While apples are baking, add the Greek yogurt to a small bowl along with 1 teaspoon of maple syrup. Mix thoroughly and place in refrigerator until apples are done baking.
  • Remove apples from oven and cool slightly.
  • Before serving, add a dollop of the maple Greek yogurt to the center of each apple and sprinkle with cinnamon.

Notes

Serve warm with a dollop of Greek yogurt for a simple and delightful dessert.
