Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a mixing bowl, combine the softened goat cheese, grated parmesan, rosemary, thyme, parsley, salt, and pepper. Mix until well incorporated.
Use your hands to form small balls, about 1 inch (2.5 cm) in diameter, from the cheese mixture. You should yield around 12-15 cheese balls.
Set up a breading station with three shallow bowls: one with all-purpose flour, one with the beaten eggs, and one with breadcrumbs.
Roll each cheese ball in the flour, then dip it into the eggs, and finally coat it with breadcrumbs. Place the coated balls on the prepared baking sheet.
Once all the balls are coated, lightly spray them with olive oil to promote even browning.
Bake in the preheated oven for 12-15 minutes, or until the balls are golden brown and crispy.
Remove from the oven and let them cool for a few minutes before serving. You can serve them warm with toothpicks or skewers.
