  • 10 8-inch flour tortillas warm if using gluten-free
  • 1 lb ground beef
  • ½ cup yellow onion finely diced
  • 2 cloves garlic minced
  • 2 teaspoon chili powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon ground cumin
  • ½ teaspoon paprika
  • 8 oz tomato sauce or crushed tomatoes
  • 1 cup shredded cheese cheddar or Monterey Jack

  • Preheat oven to 400°F. Line baking sheet with parchment or grease lightly.
  • In a large skillet over medium heat, cook ground beef until browned, about 5-7 minutes.
  • Add diced onion and cook for an additional 2 minutes.
  • Stir in garlic, chili powder, salt, black pepper, cumin, and paprika. Cook another minute until fragrant.
  • Add tomato sauce or crushed tomatoes and simmer for 5 minutes. Remove from heat.
  • Warm tortillas to make them pliable. Spoon beef mixture along one edge of each tortilla.
  • Roll tightly into taquitos and place seam-side down on prepared pan.
  • Spray or brush tops with oil for crispiness.
  • Bake for 18–20 minutes until golden and crisp.
  • Let cool a few minutes before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 3 months. Reheat in oven for best crispiness.
