Ingredients
  

  • 12 ounces French baguette
  • 8 ounces goat cheese Softened
  • 1 cup fresh blueberries Rinse and pat dry before using
  • ¼ cup balsamic vinegar
  • 2 tablespoons honey
  • 2 tablespoons olive oil For brushing on baguette slices
  • to taste salt
  • fresh mint leaves For garnish, optional

Instructions
 

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Slice the French baguette into ½-inch slices and arrange them on the baking sheet.
  • Brush each slice lightly with olive oil and bake in the preheated oven for about 8-10 minutes, or until the crostini are golden and crispy. Remove from oven and let cool slightly.
  • In a small saucepan over medium heat, combine the balsamic vinegar and honey. Bring to a simmer and cook for about 5-7 minutes, stirring occasionally, until the mixture has thickened slightly. Remove from heat and let cool.
  • Rinse and pat dry the blueberries.
  • Spread a generous amount of soft goat cheese onto each crostini.
  • Top each crostini with a few blueberries.
  • Drizzle the balsamic reduction over the crostini and sprinkle with a pinch of salt.
  • Garnish with fresh mint leaves, if desired, and serve immediately.

Notes

For an extra touch, you can add some crushed nuts over the top for crunch.
This recipe can be easily doubled for larger gatherings.
Leftover crostini can be stored in an airtight container for up to 2 days, but are best served fresh.
