Preheat grill or grill pan to medium-high heat.
In a bowl, combine mayonnaise, sweet chili sauce, Sriracha, honey, rice vinegar, and garlic powder to make the bang bang sauce.
In a large bowl, toss chicken chunks with salt, pepper, and vegetable oil.
Thread chicken onto soaked bamboo skewers, leaving space between the pieces.
Grill skewers for 10–12 minutes, turning occasionally until chicken is cooked through.
Brush bang bang sauce over the skewers and grill for another 1–2 minutes to caramelize.
Remove from heat and drizzle more sauce over the skewers.
Garnish with chopped green onions and serve immediately.
Notes
Make extra bang bang sauce for dipping or drizzling on rice bowls. Leftovers store well for easy meal prep.
