  • 1 ½ pounds Boneless skinless chicken thighs cut into chunks
  • ¼ cup Mayonnaise
  • 2 tablespoons Sweet chili sauce
  • 1 tablespoon Sriracha sauce
  • 1 tablespoon Honey
  • 1 tablespoon Rice vinegar
  • 1 teaspoon Garlic powder
  • ½ teaspoon Salt
  • ¼ teaspoon Black pepper
  • 1 tablespoon Vegetable oil
  • Green onions chopped, for garnish
  • Bamboo skewers soaked in water

  • Preheat grill or grill pan to medium-high heat.
  • In a bowl, combine mayonnaise, sweet chili sauce, Sriracha, honey, rice vinegar, and garlic powder to make the bang bang sauce.
  • In a large bowl, toss chicken chunks with salt, pepper, and vegetable oil.
  • Thread chicken onto soaked bamboo skewers, leaving space between the pieces.
  • Grill skewers for 10–12 minutes, turning occasionally until chicken is cooked through.
  • Brush bang bang sauce over the skewers and grill for another 1–2 minutes to caramelize.
  • Remove from heat and drizzle more sauce over the skewers.
  • Garnish with chopped green onions and serve immediately.

Notes

Make extra bang bang sauce for dipping or drizzling on rice bowls. Leftovers store well for easy meal prep.
