  • 4 slices Sourdough, tiger, or giraffe bread large or 8 small slices
  • 2 ½ cups Cooked chicken shredded, about 250-300g
  • cup BBQ sauce to your taste
  • 4 slices Monterey or pepper jack cheese for melting
  • 4 slices Cheddar cheese or favorite secondary cheese
  • ¼ - ⅓ cup Red onion finely diced
  • ¼ cup Pickled jalapeños finely diced, adjust to taste
  • As needed Butter for spreading on bread

  • Mix your shredded chicken with the BBQ sauce, diced red onion and pickled jalapeños till it’s all even and coated.
  • Butter one side of each bread slice; this side’s gonna get grilled first.
  • Heat a skillet or griddle to medium, hot enough to hear a sizzle but not so much that it burns fast.
  • Start layering by placing one slice butter side down, then adding a slice each of Monterey or pepper jack and cheddar cheese.
  • Spread your chicken mix generously right on top of the cheese.
  • Top with cheese again then add the second bread slice with butter side up.
  • Cook till golden brown, about 3-4 minutes, then flip and cook the other side till cheese’s all melted and bread’s perfectly toasted.
  • Remove, let rest a minute, slice, and serve while hot.
