- 2 cans chickpeas, drained and rinsed 15 oz each.
- ½ cup BBQ sauce
- 1 tablespoon olive oil
- 1 medium red bell pepper, diced
- ½ medium red onion, diced
- 1 cup corn canned or frozen.

- 1 head romaine or butter lettuce, leaves separated
- for garnish Fresh cilantro optional.
Heat the olive oil in a frying pan over medium heat.
Add the diced red onion and red bell pepper to the pan. Sauté for about 3-4 minutes, until the vegetables are softened.
Stir in the chickpeas and corn. Cook for an additional 2-3 minutes, allowing the mixture to heat through.
Pour in the BBQ sauce and stir until everything is well coated. Let it cook for another 2-3 minutes, stirring occasionally.
Season with salt and pepper to taste.
Remove from heat and let it cool slightly.
To assemble, take a lettuce leaf and spoon some of the chickpea mixture onto the leaf.
Garnish with fresh cilantro, if desired, then fold the lettuce around the filling and enjoy!
Feel free to customize the wraps by adding other vegetables like shredded carrots or cucumber.
For extra flavor, you can also add avocado or a dollop of Greek yogurt as a topping.
These wraps can be made ahead of time; simply store the chickpea mixture in the fridge and assemble the wraps just before serving.
