- 16 large jalapeño peppers
- 1 can black beans 15 oz, drained and rinsed.
- 1 cup cream cheese Softened.
- 1 cup shredded cheddar cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cumin
- to taste salt
- to taste pepper
- ½ cup sour cream For serving, optional.
- to taste fresh cilantro Chopped, for garnish, optional.
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper if desired.
Carefully slice each jalapeño in half lengthwise. Remove the seeds and membranes using a spoon or your hands.
In a mixing bowl, combine the black beans, softened cream cheese, shredded cheddar cheese, garlic powder, onion powder, cumin, salt, and pepper. Mix well until all ingredients are well combined.
Spoon the bean mixture evenly into each jalapeño half, filling them generously.
