Ingredients
  

  • 2 pounds beef short ribs or brisket
  • 8 cups water
  • 1 medium onion quartered
  • 2 medium tomatoes quartered
  • 1 radish daikon sliced
  • 1 cup green beans trimmed
  • 1 cup taro peeled and cubed
  • 1 cup eggplant sliced
  • 2-3 pieces green chili peppers optional
  • ½ cup tamarind paste or 1 cup fresh tamarind pulp
  • 2 tablespoons fish sauce
  • to taste salt
  • to taste pepper
  • fresh cilantro or green onions for garnish (optional)

Instructions
 

  • In a large pot, combine the beef short ribs and water. Bring to a boil over medium-high heat.
  • Once boiling, skim off any foam that rises to the surface. Add the quartered onion and tomatoes. Reduce the heat to low and let it simmer for about 30 minutes, or until the meat is tender.
  • After 30 minutes, add the sliced radish, cubed taro, and green beans to the pot. Cook for another 10 minutes.
  • Stir in the sliced eggplant and green chili peppers (if using). Continue to simmer for about 5 minutes, or until the vegetables are tender.
  • Add the tamarind paste and fish sauce. Stir well, then season with salt and pepper according to your taste. Allow the soup to simmer for an additional 5-10 minutes.
  • Once done, remove from heat and serve hot. Garnish with fresh cilantro or sliced green onions if desired.

Notes

If using fresh tamarind, boil the pulp in water, mash it, and strain to extract the juice before adding it to the soup.
Adjust the sourness by adding more or less tamarind paste, based on your preference.
