Ingredients
  

  • 3 large bell peppers Any color
  • 1 medium onion
  • 2 cloves garlic Minced
  • 1 pound ground beef Or turkey
  • 1 can (15 oz) black beans Drained and rinsed
  • 1 cup corn Frozen or canned
  • 1 can (14.5 oz) diced tomatoes Drained
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • to taste salt and pepper
  • 1 cup shredded cheese Cheddar or mozzarella
  • ½ cup cooked rice Optional
  • splash olive oil

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Slice the bell peppers in half lengthwise and remove the seeds. Set aside.
  • In a large skillet, heat a splash of olive oil over medium heat. Add the chopped onion and minced garlic and sauté until the onion is translucent (about 3-5 minutes).
  • Add the ground beef (or turkey) to the skillet, breaking it apart with a spoon. Cook until browned and fully cooked, about 7-10 minutes. Drain any excess fat.
  • Stir in the black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper. If using rice, mix it in at this step. Cook for another 5 minutes.
  • Carefully spoon the mixture into the prepared bell pepper halves and place them upright in the baking dish.
  • Cover the dish with aluminum foil and bake for 30 minutes.
  • Remove the foil, sprinkle cheese on top of the peppers, and bake for an additional 15 minutes, until the cheese is melted and bubbly.
  • Remove from the oven and allow to cool for a few minutes before serving.

Notes

You can customize this casserole by adding additional vegetables or spices to suit your taste.
This dish can be made ahead of time and stored in the refrigerator for up to 2 days before baking. Just ensure to increase the baking time slightly if refrigerated.
Leftovers can be stored in an airtight container for up to 3 days.
