Ingredients
  

  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • ½ cup milk
  • ½ cup unsalted butter
  • 1 cup creamy peanut butter
  • 3 cups quick-cooking oats
  • 1 teaspoon vanilla extract
  • pinch pinch salt

Instructions
 

  • In a medium saucepan, combine the granulated sugar, cocoa powder, milk, and butter. Place the saucepan over medium heat. Stir occasionally until the mixture comes to a rolling boil, about 2-3 minutes.
  • Once boiling, let it boil for 1 minute without stirring. Remove the saucepan from heat.
  • Stir in the peanut butter, oats, vanilla extract, and a pinch of salt until fully combined.
  • Using a spoon or spatula, drop spoonfuls of the mixture onto a baking sheet lined with wax paper or parchment paper.
  • Allow the cookies to cool at room temperature until they are set, about 10-15 minutes.

Notes

For a variation, you can add chocolate chips, dried fruit, or nuts to the mixture before dropping them onto the baking sheet.
Make sure to store any leftovers in an airtight container to keep them fresh.
If you prefer a firmer cookie, let them cool in the refrigerator for a bit longer.
