Ingredients
  

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ½ cup unsalted butter, softened
  • 1 cup whole milk
  • 3 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 1 ½ cups fresh strawberries, hulled and chopped Ensure the strawberries are fresh and ripe for the best taste.
  • 1 cup whipped cream for frosting, optional

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease and flour the cake pans, or line them with parchment paper.
  • In a large mixing bowl, cream together the softened butter and sugar until light and fluffy, about 3-4 minutes using an electric mixer.
  • Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the butter mixture alternately with the milk, starting and ending with the flour mixture. Mix until just combined.
  • Gently fold in the chopped strawberries using a rubber spatula, being careful not to break them down too much.
  • Divide the batter evenly between the prepared cake pans. Smooth the top with a spatula.
  • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes before transferring them to a cooling rack to cool completely.
  • Once the cakes are completely cool, frost with whipped cream if desired, and decorate with additional strawberries on top.

Notes

For a richer flavor, you can add a tablespoon of strawberry puree to the batter.
