Ingredients
  

  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 cup unsalted butter (softened)
  • 1 ½ cups white sugar
  • 1 number egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract (optional)
  • ½ teaspoon salt
  • Additional amount sugar for rolling (optional)

Instructions
 

  • Preheat your oven to 375°F (190°C) and line your baking sheet with parchment paper.
  • In a mixing bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
  • In a separate large bowl, cream together the softened butter and sugar using an electric mixer or whisk until the mixture is light and fluffy.
  • Beat in the egg, vanilla extract, and almond extract (if using) until well combined.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • If desired, roll tablespoon-sized balls of dough in sugar before placing them on the prepared baking sheet. If using cookie cutters, roll out the dough to about ¼ inch thickness and cut into desired shapes.
  • Bake in the preheated oven for 8-10 minutes or until the edges are lightly golden. Be careful not to overbake!
  • Remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to a cooling rack.

Notes

For added flavor, you can experiment with other extracts such as lemon or coconut.
These cookies are great for decorating with royal icing or buttercream!
