Ingredients
  

  • 8 oz pasta (such as rotini or fusilli)
  • 6 slices bacon
  • 1 cup cherry tomatoes, halved
  • 1 cup romaine lettuce, chopped
  • ½ cup shredded sharp cheddar cheese
  • ¼ cup mayonnaise
  • 2 tablespoons sour cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • to taste salt
  • to taste pepper

Instructions
 

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain and rinse with cold water to cool the pasta.
  • While the pasta is cooking, in a skillet over medium heat, cook the bacon until crispy, about 6-8 minutes. Remove from the skillet and let it cool, then crumble it into pieces.
  • In a large mixing bowl, combine the cooked pasta, crumbled bacon, cherry tomatoes, chopped romaine lettuce, and cheddar cheese.
  • In a separate small bowl, mix together the mayonnaise, sour cream, Dijon mustard, apple cider vinegar, salt, and pepper. Stir until well combined.
  • Pour the dressing over the pasta and other ingredients. Toss everything together until evenly coated.
  • Serve immediately or refrigerate for at least 30 minutes to enhance the flavors before serving.

Notes

You can add more or less bacon or cheese according to your preferences.
Feel free to substitute or add other vegetables like cucumbers or bell peppers for added crunch.
This salad can be made a few hours in advance and stored in the refrigerator until ready to serve.
