Equipment

  • 1 mixing bowl
  • 1 whisk or fork
  • 1 baking dish or grill pan
  • 1 meat thermometer
  • 1 cutting board

Ingredients

  • 4 pieces boneless skinless chicken breasts About 1.5 pounds total.
  • ¼ cup olive oil
  • 3 tablespoons lemon juice About 1 lemon.
  • 3 cloves garlic Minced.
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • to taste pieces lemon slices For garnish (optional).
  • to taste pieces fresh parsley For garnish (optional).

Instructions

  • In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, salt, and black pepper until well combined.
  • Place the boneless skinless chicken breasts in a baking dish or a resealable plastic bag. Pour the marinade over the chicken, making sure each piece is coated evenly. Marinate for at least 15 minutes or up to 2 hours in the refrigerator.
  • Preheat your grill pan or oven to 375°F (190°C).
  • If using a grill pan, cook the chicken breasts for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). If using the oven, place the marinated chicken in a baking dish and bake for 20-25 minutes.
  • Once cooked, remove the chicken from heat and let it rest for 5 minutes before slicing to allow the juices to redistribute.
  • Serve with lemon slices and fresh parsley for garnish, if desired.

Notes

You can adjust the marinating time according to your preference. The longer you marinate, the more intense the flavor will be.
This dish pairs well with steamed vegetables, rice, or quinoa for a complete meal.
