Preheat oven to 400°F.
Slice chicken breasts lengthwise to make 4 thin cutlets and season with garlic powder, salt, and pepper.
Heat olive oil and butter in a skillet over medium-high heat.
Sear chicken breasts for 2-3 minutes per side until golden, then remove and set aside.
Add chopped onion to the same skillet and sauté for 3-4 minutes until softened.
Pour in chicken broth and scrape up browned bits from bottom of skillet.
Stir in softened Boursin cheese until creamy and smooth.
Return chicken to skillet, spoon sauce over top, and transfer to oven.
Bake for 15-20 minutes until chicken is fully cooked. Garnish with parsley if using and serve.
Notes
Chicken is done when internal temperature reaches 165°F. This dish pairs great with mashed potatoes or steamed green beans.
