  • 2 large chicken breasts sliced into 4 thin cutlets
  • ½ teaspoon garlic powder
  • Salt and freshly cracked pepper to taste
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • ½ medium onion chopped
  • ¾ cup low sodium chicken broth
  • 1 package Boursin Fine Herbs & Garlic cheese 5.2 oz, softened
  • 1-2 tablespoons chopped parsley optional

  • Preheat oven to 400°F.
  • Slice chicken breasts lengthwise to make 4 thin cutlets and season with garlic powder, salt, and pepper.
  • Heat olive oil and butter in a skillet over medium-high heat.
  • Sear chicken breasts for 2-3 minutes per side until golden, then remove and set aside.
  • Add chopped onion to the same skillet and sauté for 3-4 minutes until softened.
  • Pour in chicken broth and scrape up browned bits from bottom of skillet.
  • Stir in softened Boursin cheese until creamy and smooth.
  • Return chicken to skillet, spoon sauce over top, and transfer to oven.
  • Bake for 15-20 minutes until chicken is fully cooked. Garnish with parsley if using and serve.

Notes

Chicken is done when internal temperature reaches 165°F. This dish pairs great with mashed potatoes or steamed green beans.
